Granny's Hominy Ham Biscuits


1 cup all-purpose flour 
1/2 teaspoon salt 
2 1/2 teaspoons baking powder 
1/4 teaspoon sugar 
2 tablespoons lard 
6 tablespoons milk 
1/2 cup grits, cooked, cold 
1/4 cup country ham, cooked and diced
 
Sift the flour, salt, baking powder, and sugar together in a bowl.
 Add the lard and work all through the flour with the fingertips.
 Stir in the milk. Beat in the grits and ham until well mixed.
Turn the dough out on a lightly floured surface. Knead briefly, about 10 strokes, and roll to
a 3/8-inch thickness. Cut into 2-inch rounds. Bake in an oven preheated to
400 degrees F. on an ungreased sheet for about 10 minutes.
Check the bottoms; they will brown more quickly than the tops.
