Fashion Baking Powder Biscuits
2 cups all purpose flour
3 tsp baking powder
1/2 tsp salt
1/2 cup shortening
3/4 to 1 cup milk
Heat oven to 450F. In a bowl combine flour, salt and baking powder. With a
fork cut
in shortening until you get a coarse meal. Add milk; stir with fork until
mixture leaves
sides of bowl and forms a soft moist dough. On a floured surface toss until no
longer
sticky. Roll out 1/2" thick, cut with 2" cutter. Place on ungreased
baking pan
and bake 12 mins or until golden brown. Butters
Note; For buttermilk biscuits, add 1/2 tsp baking soda to flour and substitute
buttermilk for milk.
For cheese biscuits add 4 oz Cheddar cheese to flour shortening mixture and bake
on greased pan.
For soft side biscuits; place in 9" pan with sides touching.
For thin crispy biscuits roll 1/4 inch thick and cut 3". Make sure biscuits
don't touch.
For Southern biscuits reduce shortening to 1/4 cup.

to do that of another, even though efficiently.
