Lynn's Tofu Whole Wheat Biscuits

 

8 oz Firm silken tofu 
1/4 c Apple juice 
1 c Whole wheat flour 
1/2 c Rye flour 
1/2 c Wheat germ, toasted 
1 tbs Baking powder 
1 tbs Baking soda 
1/4 tesp Salt, optional 
1/4 tesp Sesame seeds, toasted 

Preheat oven to 450F & oil cookie sheets. Blend tofu until smooth & blend in the apple & lemon juices. Transfer to a medium-sized mixing bowl & set aside. Sift together remaining ingredients, except the sesame seeds. Fold flours & seeds into tofu mixture. Turn out onto a lightly floured board, roll out dough to 1/2" thickness, cut with cookie cutter & bake for 12 minutes. Serve immediately.

The second day of a diet is always easier than the first. By the second day you're off it.
