Kat's Buttermilk Biscuits

 

1 pkg dry yeast
2 tbs warm water
1 cup vegetable shortening
5 cups flour
2 tbs sugar
1 tsp salt
1 tsp baking soda
3 tsp baking powder
2 cups buttermilk

Dissolve yeast in warm water. Cut shortening into dry ingredients, add yeast and buttermilk.
Knead lightly. Roll out on flour board and cut. Let rise 3 hours. Bake @ 400F
12-15 mins. Can be frozen on cookie sheet then placed in plastic bags.

To substitute for buttermilk 1 tbs vinegar or lemon juice plus milk to make 1 cup
For soft biscuits let touch when baking, for firmer  biscuits, do not let touch.

James's Butter Milk Biscuits


2 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
5 tablespoons chilled vegetable shortening
1 cup buttermilk
Preheat oven to 425F. In a large bowl, sift together flour, baking powder, salt, and baking soda. Cut shortening into the flour mixture with a pastry blender until the mixture forms coarse crumbs.

 

Add buttermilk, tossing with a fork, until dough holds together.

Turn dough onto a floured surface and form into a disk. Knead lightly just a few times until smooth.

Pat dough to a 3/4-inch thickness. Using a biscuit cutter or glass dipped in flour, cut out biscuits. Place biscuits about 2 inches apart on an ungreased baking sheet. Gather the trimmings and repeat forming and cutting.

Bake about 12 to 15 minutes, until golden brown.

Granny's Buttermilk Biscuits

 

3 cups flour
4 teaspoon baking powder
1/2 teaspoon baking soda
6 tablespoon (rounded) regular or butter flavored shortening
1 to 1 1/2 cups buttermilk

Preheat oven to 425 degrees. Mix flour, baking powder and baking soda in a medium bowl. Add shortening and cut in with knife until well blended. Add buttermilk and mix well (dough will be sticky). Roll dough out on well-floured board and cut with sharp biscuit cutter. Place in pan. Bake until brown.

 

  Buttermilk Biscuits

2 cups Bisquick® baking mix or Shanna's Basic Baking Mix SC113
2/3 cups buttermilk
2 tsp. granulated sugar
1/4 tsp. salt
2 Tbls. margarine - melted, divided

Combine Bisquick®, buttermilk, sugar, salt, and half the melted margarine in a medium bowl and mix until well blended.
-Turn dough out onto a floured surface and knead for 30 seconds, until dough becomes elastic.
-Roll dough to 3/4" thick and cut out 3" circles with a cookie cutter or glass.
-Arrange circles on an ungreased baking sheet and bake in 450 degree oven for 10-12 minutes, until golden on top and doubled in height.
-Brush biscuits with melted margarine immediately upon removing from oven
