Ham and Spinach Casserole
2 cups diced ham
1 package frozen spinach thawed & drained
1 lb wide egg noodles
1 cup shredded cheese
2 tbl butter
3 tbl hot milk
bread crumbs (seasoned or plain)
salt & white pepper
Cook noodles according to package. Melt butter in saucepan, blend in
flour with wisk. Remove from heat, add milk, return to heat, cook stirring
constantly until thick and bubbly. Salt and pepper to taste. Add
cheese to sauce and stir until melted and blended.
When noodles are cooked, drain. Mix with noodles all but 3/4 cup of sauce.
In baking dish layer 1/3 noodle-sauce mixture, 1/2 ham and spinach, then another
layer 1/3 of noodle-sauce mixture, then remaining 1/2 ham and spinach, then the
final 1/3 of noodle-sauce mixture.
Pour reserved sauce over top and sprinkle with bread crumbs. Bake @ 350
for 30-45 minutes.
