James's Crab & Shrimp Gumbo

 

2 bn green onions
4 slc bacon
4 tbl flour
1 lrg onion, chopped
3 x ribs celery, chopped
1 sm green bell pepper, chopped
1 lb fresh okra, sliced
1 can tomatoes, (28 ounces)
    undrained
    salt and freshly ground black pepper, to taste
1 qt fresh shrimp, peeled deveined and
    halved
1 qt picked crab meat
1 tbl Gumbo File

 Method :
Chop green onions, separating the green and white portions. Reserve 1/2 cup chopped green tops and set aside. Fry bacon in a skillet; drain on paper towels. Stir flour into bacon grease and brown, stirring constantly. Add all onions (except reserved tops), celery, bell pepper and okra. Cook 15 minutes, stirring constantly. Stir in tomatoes and simmer 5 to 10 minutes. Place contents in a large pot, and add tomatoes and 2 or 3 tomato cans of water; bring to a boil. Season with salt and pepper. Add shrimp and cook until they turn pink, add crab. Add reserved onion tops and simmer 2 hours or more. One half hour before serving, add File. Serve with steamed rice.
Serves 12.
*Note: You can also use fresh crabs. Just clean and break in half.
