Granny's Sausage Chicken Rice Gumbo
3/4 lb boneless skinless chicken thighs cut into 1" pieces
1/4 lb smoked sausage fully cooked,
chopped
(2 - 5 inch sausages)
2 stalk sliced celery with leaves
( about 1 1/4 cups )
3/4 cup chopped carrots
1/2 cup chopped onion
14 1/2 oz canned tomatoes undrained
5 cup water
2 tbl chicken bouillon granules
1 tsp dried thyme leaves
10 oz frozen okra cut, thawed &
drained
3 cup hot cooked rice for serving
hot sauce
Method :
Mix all ingredients except okra, rice and pepper sauce in 3 1/2 to 6 quart slow
cooker.
Cover and cook on low 7 to 8 hours or until chicken is cooked in centre.
Stir in okra. Cover and cook on low heat setting 20 minutes.
Spoon rice into individual soup bowls; top with gumbo. Serve with pepper sauce.
