Cullen's Sausage Okra Chicken Gumbo

 

2 lb chicken, cooked, skinned,
    and deboned, reserve 8 cups stock
2 lrg onions, chopped
1/2 bn celery, chopped
1/4 cup green onions, chopped
1/4 cup red bell peppers, chopped
3 lb fresh okra, cut into 1/2" pieces
1/4 cup fresh parsley, chopped
1 tbl file powder
1 tbl seasoning salt
1/2 cup brown gravy
1 lb smoked pork or beef sausage, cooked and drained

 Method :
In a large pot, combine the reserved chicken stock, onions, celery, green onions, bell peppers, okra, parsley, file powder, salt, and gravy and cook on medium heat, stirring frequently, for 1 hour.
Add the cooked chicken and the sausage and cook for 15 to 20 minutes more.
Adjust the seasonings. Serve immediately.
YIELD: 6 TO 8 SERVINGS
