Cullen's Crawfish Sausage Mustard Sauce

 

2 Lb Texas Cajun Crawfish Sausage, sliced
1 Large onion, quartered and sliced
2/3 Cup Beer (any will do, I prefer Shiner)
1/3 Cup Brown sugar
1/4 Cup Vinegar
1/4 Cup Prepared mustard
1 Tbs Cornstarch mixed with 2 Tsp water to form a paste
Cooking Instructions:

Slice sausage and place into a crock-pot along with the onion.  Combine remaining ingredients and pour over sausage and onions.  Cover and cook on low for 6 to 8 hours; stir in cornstarch paste to thicken before serving.

Makes 6 servings.
