Kat's Crawfish Sausage Potato Bake
1 Lb Texas Cajun Crawfish Sausage, sliced
1 Onion, sliced
4 Russet potatoes, diced large
2 Large green peppers, diced large
2 Tbs Olive oil Greek or Cajun Seasoning to taste
Cooking Instructions:
Preheat oven to 375 degrees.
Cut sausages into ¼ inch pieces. Cut potatoes into 1 inch chunks (peeling
is not necessary). Slice onion. Place sausages, potatoes, and onion
in a 9 x 12 baking dish.
Drizzle with olive oil and toss to mix. Sprinkle liberally with your
favorite Greek or Cajun seasoning.
Place in oven and bake for 40 minutes, stirring two or three times.
Meanwhile, cut pepper into 1 inch chunks. Add to pepper mixture after it
has baked 40 minutes and stir. Taste & add more seasoning, if
desired.
Bake for an additional 20 minutes, stirring once. Serve hot.
Makes 4 servings.
