Kat's Crawfish Cakes

 

1 lb crawfish tail meat 
3 tbs mayonnaise 
2 lrg whole eggs 
2 tbs chives 
2 tbs chopped red peppers 
2 tbs chopped green peppers 
1/2 tbs Cajun seasoning, to taste 
1/4 tsp black pepper 
2 cup fresh white bread crumbs 
1 tsp dry mustard 
1 tsp Worcestershire sauce 

 Method : 
Preheat broiler to 400 degrees. Combine crawfish, mayonnaise, eggs, chives, Cajun seasoning, pepper, red peppers, green peppers, mustard and Worcestershire sauce with half the bread crumbs. Stir well. Shape crawfish mixture into 1-inch-by-4-inch patties and cover with remaining crumbs. Transfer cakes to baking pan lined with foil. Place pan on lowest rack and broil until light-brown, about 20 minutes. Serve with greens and top with sauce. Optional: pan saute cakes on non-stick skillet on medium-high heat for about three minutes on each side.
