  Kat's Durango Chili

 

3 lbs. ultra-lean ground beef (95% fat free)
2 large yellow onions (coarse chop)
3 4 oz. cans of Chipotle peppers in adobo*
2 14 oz. cans whole hominy (drained) *
1 Tbsp. ground cumin
1 tsp. ground oregano
4 whole garlic cloves (minced) or 2 Tbsp. garlic powder
1 28 oz. can diced tomatoes in juice

salt and pepper to taste  
To taste; picante or other sauce Mexican Sauces M72

* Available at larger supermarkets and Latin American specialty markets.

USE HEAVY SAUCE PAN OR DUTCH OVEN WITH LID

1. Sauté the chopped onions in vegetable oil until slightly softened. (excess oil will be removed later in process) or soften in defatted chicken stock.
2. In a separate pan, cook the ground beef until "crumbly". Skim off any excess fat from surface.
3. Add the cooked beef to chili pot with onions.
4. Finally chop the chipotle peppers using caution to frequently wash hands as these peppers are fairly hot!
5. Add chipotle peppers (including adobo sauce) to chili pot.
6. Add remaining ingredients and cover with water or stock and bring to boil.
7. Reduce heat to simmer, partially cover with lid, and continue to simmer for about an hour.
8. Skim off any excess fat and continue to simmer for additional ˝ hour.
9. Serve with fresh scallions and cilantro.

Chili 2

3 lbs coarsely ground lean beef
3 tbs oil
1 cup chopped onion
2 cloves garlic minced
5 tbs chili powder
11/2 tbs ground cumin
1 tsp oregano
Salt & pepper
2 qts water
3 cups chopped peeled tomatoes or drained can ones
2 tbs four
2 tbs cold water
2 tbs cornmeal
Grated cheese
Sliced raw onion

Brown the beef in oil with garlic and onion. Break up the meat as it cooks. Add chili powder,
cumin, oregano, salt and pepper brown a couple minutes. Add water, cover and cook 1 hour over low heat.
Add tomatoes cook uncovered 30 mins. Mix flour with cold water and add. Sprinkle cornmeal
over chili and stir. Cook until thickened, while stirring. 

   

Serve with grated cheese and raw onion.

       Chili 3

4 lbs ground beef
1 large onion chopped
2 cloves garlic, minced
2 tbs oregano
2 tbs cumin seed
4 tbs chili powder
2 cans Ro-tel tomatoes # 2 can
2 cups hot water
Salt & pepper

sear meat in pan, add onion and garlic and spices. Cook 4-5 mins. Add water, blend.
Bring to a boil. Reduce heat to low and simmer 1 hour.
