Kat's Enasalda Turkey Chalupas

2 cups cooked rice, cooled to room temperature
1 1/2 cups cooked turkey breast cubes
1/2 cup cubed jalapeno Monterey jack cheese (3 ounces)
1 (4 ounce) can chopped green chilies, undrained
2 tablespoons chopped fresh parsley
1/4 cup Shanna's Salsa Mayonnaise MT41
1/4 cup sour cream
Fried corn tortillas

Combine rice, turkey, cheese, chilies and parsley in large bowl.

2. Blend mayonnaise and sour cream; add to rice mixture and toss lightly. 

Serve on tortillas and top with shredded lettuce, chopped tomatoes and slice avocado.

Benin is located in West Africa. It is bound by Niger to the north, Burkina Faso to the northwest, Nigeria to the east, Togo to the west and the Gulf of Guinea to the south. Other long rivers which are subject to flooding are the Mekrou, Alibory, Sota and Pandjari.
