Cabbage Carrot Potato Casserole
1 4 lb chicken
Kosher salt
pepper
2 tbs olive oil
1 cup dry whit wine
8 1 inch boiling potatoes
8 cloves garlic
1 medium size cabbage, cored and cut into eights
2 large carrots cut into 1 inch chunks
4 medium potatoes quartered
2 cups chicken stock
1/2 cup parsley
Wash chicken, season with salt & pepper. Place oil in skillet over
medium high. Brown chickenon both sides. Arrange chicken in oven proof cover
pot. Deglaze skillet with wine, Stir wine into pot with chicken and stir add
everything else and bake @ 400 1 hour add parsley and serve.
