Chicken Casseroles
Kat's Chicken Green Bean Rice Casserole
9 oz. pkg. frozen cut green beans
1 lb. raw chicken, cut into chunks
1 (4-oz.) can sliced mushrooms, drained
1 clove garlic, crushed
2 tablespoons olive oil
1 14-oz. can chicken broth OR
1 14-oz. can cream of chicken soup
salt, pepper, tarragon to taste
1-1/2 cups instant rice
Sauté the chicken, mushrooms, and garlic in the oil in a large pan until the
chicken is golden brown
Add the broth or soup, beans, seasonings, mix well
Bring to a full boil, then stir in the rice
Remove the pan from heat, cover, and let stand for 5 minutes or until the rice
is tender
I have made this with peas and carrots when I didn't have green beans on hand,
and sometimes I sauté some chopped onions too. The whole thing takes maybe 20
minutes :-)
