James Whole Chicken With Wild Rice Casserole

 

2 3 lb chickens
1 cup water
1/2 cup diced celery
1 cup dry sherry
11/2 tsp salt
1 medium onion sliced
1/2 tsp curry


2 pkgs long grain and wild rice
1 cup sour cream
1/2 cup butter
1 lb fresh mushrooms
1 can cream of mushroom soup

Place chickens and next 6 items in kettle and simmer 1 hour. Remove chicken and strain broth and refrigerate.
Bone chicken cut into bite size pieces. Sauté mushrooms in butter. Follow directions for firm rice using
chicken broth as part liquid needed. Combine chicken, rice, mushrooms, sour cream and soup
in 4qt casserole, garnish with mushroom and for 1 hour @ 350. May be frozen
