Kat's Wings With Bleu Cheese Sauce

 

Ingredients for Wings
24 medium size chicken wings cut into two.
1/ 4 cup of chopped garlic
½ bunch fresh rosemary (chopped)
½ bunch of chopped fresh oregano
Salt and pepper

Ingredients for Sauce
1 large shallot (chopped)
1 tablespoon unsalted butter
Splash white wine
1cup chicken stock
Juice of ½ cup lemon
1 teaspoon of Tabasco
A teaspoon of crushed red pepper
½ teaspoon cayenne pepper

Method for Sauce
Saute one large chopped shallot in 1 tablespoon of butter until lightly brown and limp. Splash white wine, then add 1 cup of chicken stock, juice of ½ lemon.

Reduce to glaze. Add teaspoon of Tabasco Sauce, a teaspoon of crushed red pepper, ½ teaspoon
cayenne pepper

Method & Ingredients for Blue Cheese Dressing
1 cup of gorgonzola cheese or Danish blue cheese
1 cup of mayonnaise (Hellman's)
Juice of one lemon
Put all ingredients in a bowl, mix very well, season with salt and pepper.

Deep fry (or bake at 350 degrees oven 25-30 minutes) the marinated chicken wings for 10 to 15 minutes (350 degrees)
Take off the grease with paper towel.

Add fried wings to the reduced sauce. Toss to coat, season and serve with 5 ounces of celery sticks (20 pieces) and 6 ounces of blue cheese dressing.

Note: wings are marinated for 24 hours.
