James's Pesto Wings

 

5 lbs wings, tips removed
1 qt. buttermilk
1 tbsp. cayenne

Directions
Mix and marinate over night.
Dredge in 16oz chickpea flour.
Add 2 tbsp. Cajun seasoning.
Cook 350 degrees approx 8-10 min.
Remove from oven. Check if cooked through.
Heat pan to medium heat with 4 oz of chicken stock and 2 tbsp. of basil pesto.
Toss to coat.
Garnish with pignoli nuts
