Kat's Tex Mex Kabobs

 

 8 Soft Taco Size Flour Tortillas warmed 
4 Chicken Breast Halves cut in large chunks
1 cup Orange Juice
1 large Onion chopped in large wedges or chunks
12 Cherry Tomatoes
12 Whole Mushrooms
1/2 each Green and Red Bell Peppers cut in large pieces
1 avocado sliced

Marinade chicken chunks in orange juice for 10 minutes. Cut onion and peppers into large chunks. Prepare 4 skewers, alternating chicken and vegetables. Grill until done, 10 to 15 minutes. Place tortilla in palm of hand and kabob over tortilla. Grasp kabob and pull skewer, leaving 1/2 of the fillings inside the tortilla, add slice of avocado and hot sauce. Repeat with remaining tortillas and serve hot
