Shanna's Basque Cornish Hens
4 x Rock Cornish hens - (abt 16 oz ea)
1/4 cup flour
2 tsp salt
1/2 tsp freshly-ground black pepper
1/4 tsp chili powder
2 sm onions sliced
2 cup cubed peeled eggplant
1 x green pepper seeded, and cut into 1/2" strips
4 oz mushrooms sliced
1 jar chopped pimiento - (2 oz)
1 x garlic clove chopped
1 tbs olive oil
1 lrg bay leaf
1/2 tsp leaf thyme
1 tsp leaf basil
1 tsp salt
1/2 tsp freshly-ground black pepper
3/4 cup dry white wine or chicken broth
Method :
Rinse hens and pat dry. Mix flour, 2 teaspoons salt, 1/2 teaspoon pepper and
chili powder. Coat hens with flour mixture.
Combine onions, eggplant, green pepper, mushrooms, pimiento and garlic in crock
pot. Arrange hens on top of vegetables. Sprinkle with remaining seasonings. Pour
wine over hens.
Cover crock pot and cook on LOW setting for 6 to 8 hours. Just before serving,
taste sauce for seasoning.
This recipe yields 4 to 8 servings.
