Shanna's Avocado Spam Congealed Salad
2 lrg ripe avocados - (abt 3/4 lb ea)
1 can Spam luncheon meat - (7 oz) cut in chunks
Juice of 1 lemon
1/2 cup dairy sour cream
1/4 tsp salt
Few drops hot pepper sauce
1 env unflavored gelatin
1/4 cup cold water
Lettuce leaves
Pitted black olives
Method :
Halve, pit, and peel avocados; cut into chunks. Combine avocado, Spam, lemon
juice, sour cream, salt, and pepper sauce in food processor or blender and
process until smooth.
Soften gelatin in cold water; dissolve over boiling water. Stir in avocado
mixture. Divide into eight 1/2-cup molds. Refrigerate at least 2 hours.
To serve unmold onto lettuce-lined salad plates; garnish with black olives, if
desired.
This recipe yields 8 servings.
Nice to know: You can make this salad in individual molds or in one 4-cup mold.
