1/4 pd bacon chopped into 1/2 inch pieces
2 tbs each diced jalapenos and pimentos
1/3 cup each diced, onion, celery and bell pepper
1/4 pd butter 1 stick
1/4 cup milk
1 13 oz can each; crème style corn and whole kernel corn
salt & pepper
1 tbs sugar
2 cups corn bread cups muffins, crumbled, divided
In a skillet over med heat cook bacon until crisp, add onions, celery and
bell pepper
and cook 2 min and set aside.
In pan melt 1/4 pd butter; add milk, corn, jalapenos, pimentos, salt, pepper and
sugar.
Add bacon vegetable mix and 1 cup cornbread to corn mixture, heat well
stirring frequently. Transfer to an 8 inch by 11/2 in square pan
Moisten remaining corn with left over butter and sprinkle on top of corn and
bake at 350 until crumbs are lightly browned
