Pharonise Fried Corn Sticks

 

11/2 cup sifted cornmeal
1/2 tsp sugar
1 tsp salt
2 tbs cream
1 large egg
butter and lard, half & half as needed for frying

Combine dry ingredients and sift together in to a bowl. Beat cream with egg and work into cornmeal mixture.
little by little, pour in boiling water, blending after each addition, to get a stiff dough. By tbs mold into small cylinders. Heat about 1/8 inch fat in 10 iron skillet. add a few of the corn sticks at a time and fry over moderate heat until brown on all sides. Turn them gently so the crust remains intact.
