Kat's Jalapeno Buttermilk Cornbread
1 cup cornmeal (water ground if available)
1/2 cup sifted flour
1/2 tsp baking soda
1/2 tsp sugar
1 can cream style corn
1 med onion chopped
3-4 jalapenos chopped
1/4 lb grated Cheddar cheese
1/2 cup olive oil
2 eggs beaten
1 cup
In a bowl combine cornmeal, flour, baking soda, salt and sugar. Stir in
corn, onion, pepper, and cheese.
Combine oil with eggs and buttermilk. Add to other mixture and just stir until
moistened. Pour
into a greased 8 "skillet. Bake @ 450F for 20-25 mins until brown.
