James's Black Bean Cakes

 

4 cups cooked black beans      
8 cloves garlic, chopped     
1/2 cup cilantro, chopped    
1 teaspoon salt      
4 tablespoons olive oil      
2 tablespoons butter    


Mash the beans with the garlic. Add cilantro and season with salt. Press into cakes. Refrigerate for about 1 hour. Heat oil in a skillet. Fry the cakes over medium heat. Turn over carefully — once.

Yield: 8 cakes
