James's Baked Hush Puppies

 

1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon granulated sugar substitute (such as Splenda)
1 teaspoon salt
1/8 teaspoon ground red pepper
2 eggs. lightly beaten
3/4 cup fat-free milk
1/4 cup vegetable oil
1/2 cup finely chopped onion
Cooking spray


Directions:

Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine eggs and next 3 ingredients, stirring well; add to dry ingredients, stirring just until dry ingredients are moistened.

Coat miniature (1 3/4") muffin pans with cooking spray. Spoon about 1 Tbsp. batter into each muffin cup (cups will be about 3/4 full).

Bake at 425 F for 15 minutes or until done. Remove from pans immediately, and serve warm.
