  Black Bean Cakes

 

Cooked Black Beans; cover beans with 2 inches water, bring to a boil, boil 5 mins
let rest 1 hour, then simmer 2-3 hours until tender

Black Bean Cakes
2 Tbs Clarified butter
1 onion, minced
1 garlic clove, minced
*1 roasted red pepper, diced
*1 roasted green pepper, diced
*1 roasted yellow pepper, diced
1 jalapeno pepper, seeded & minced
¾ tsp chili powder
*1 pound cooked black beans
¾ cumin, ground
1 tsp cilantro, chopped
1 tsp limejuice
1 egg white, beaten
8 Tbs cornmeal 

*Roasted Red, Green & Yellow Peppers:  Pre-heat an outdoor barbecue pit to medium heat.  Place the peppers on the grill turning until entire pepper is roasted.  Remove the peppers and place them in a bowl and cover it with plastic wrap for 10 minutes.  Remove the covering and raise charred skin from peppers under running water.  Carefully open the peppers and remove seeds

 Drain the beans puree two-thirds of the beans, combine puree with the whole beans.  Sauté the onion, garlic and peppers until they begin to soften.  Let this mixture cool.  Add to bean mixture and blend.  Add limejuice and egg whites.  Form into patties.  Dust patties in cornmeal, and sauté in butter
