Kat's Fresh Crab Cheese Spinach Casserole

 

1 pkt Frozen spinach, chopped
1 cup Sharp cheese, grated
1/4 cup Butter plus
2 tbl Butter, melted
2 tbl Onion, minced
2 tbl Flour
1 cup Milk
1/8 tsp Curry powder
1/2 tsp Salt
1 tbl Lemon juice
1 lb Crabmeat
1/2 cup Bread crumbs

 Method :
Cook spinach and drain well. Put in the bottom of a greased casserole dish.
Sprinkle cheese over spinach. Melt 1/4 cup butter and saute onions until transparent. Melt the remaining 2 tablespoons of butter and stir in flour.
Add milk, stirring constantly, until thickened. Add curry powder and salt.
Stir lemon juice and crabmeat into sauce. Pour over spinach and cheese. Add bread crumbs on top. Bake at 350 for 30 minutes.
