Crab Casseroles

 

Cullen's Fresh King Crab Orange Casserole

 

1/4 C. butter
3 T. flour
2 C. milk
2 T. minced onion
1/2 tsp. celery salt
1/8 tsp. grated orange peel
1 T. snipped parsley
1 T. minced green pepper
1 pimento, minced
dash Tabasco
2 T. sherry
1 egg, beaten
1 tsp. salt
pinch pepper
3 C. flaked, drained, king crab meat
1/2 C. fresh bread crumbs
1 T. melted butter

Heat oven to 350º
In pan melt butter & stir in flour. Gradually add milk. Cook & stir until thick
Add onion, celery salt, orange peel, parsley, green pepper, pimento & Tabasco. Remove from heat, add sherry.
Slowly stir some of sauce into beaten egg
Stir egg mixture into rest of sauce
Add salt, pepper & crabmeat
Place in greased 1-1/2 qt. casserole
Sprinkle with bread crumbs mixed with melted butter
Bake uncovered 15-20 minutes or until brown

Serves 6
