Crawfish Casseroles
Granny's Crawfish Macaroni Casserole
One 7-1/2-ounce box macaroni and cheese dinner
1/4 lb margarine
1 large onion, chopped
2 stalks celery, chopped
One 5-ounce can evaporated milk
One 10 1/2-ounce can cream of chicken soup
One 10 1/2-ounce can Cheddar cheese soup
1 cup grated American cheese
2 pounds crawfish
Preheat oven to 400F. Boil macaroni as directed on box. Drain and rinse noodles;
set aside. Saute onions, celery and bell peppers in margarine. After vegetables
are sauteed well, add cheese packet from macaroni dinner, stir well then add
evaporated milk, cream of chicken soup and Cheddar cheese soup; mix well. Add
crawfish and macaroni; mix well. Pour into lightly greased 10 x 14 inch
casserole dish. Spread grated cheese on top. Bake for 15-20 minutes until
bubbly.
Serves 10.
