Shanna's Crawfish Onions Rice Peppers Casserole
1 cup onions, chopped
1 cup bell peppers, chopped
1 cup celery, chopped
1 stick butter (1/4 lb)
1 pound crawfish
1 can cream of mushroom soup
1 can Cheddar cheese soup
2 cups rice, cooked
1 cup onion tops (or to taste)
Tabasco and red pepper to taste
Parsley, chopped to taste
Bread crumbs
Preheat oven to 330F. Heat 1 can of cream of mushroom soup and 1 can Cheddar
cheese soup. Mix with crawfish and add 2 cups cooked rice (no salt). Add onion
tops, Tabasco and red pepper to taste. Pour in casserole dish. Sprinkle with
onion tops and parsley. Cover with bread crumbs Cook 15 minutes covered, then 15
minutes uncovered.
