Crawfish Casseroles
James's Crawfish Two Soup Rice Casserole
1 large onion, chopped
1 bell pepper, chopped
1 stick margarine (1/4 lb)
1 cup celery, chopped
1 can cream of mushroom soup
1 can Cheddar cheese soup
1 cup chopped green onions
2 pounds crawfish tails
2 cups cooked rice
1/4 cup Italian bread crumbs
1/3 cup Italian bread crumbs
2 tablespoons Season All seasoning
1 tablespoon garlic powder
2 tablespoons red pepper
Preheat oven to 350F. Cook the onion and bell pepper in the margarine. Add
celery, then the cream of mushroom and Cheddar cheese soups, green onions and
the two pounds of crawfish tails. Heat thoroughly. Stir in the cooked rice and
the 1/4 cup Italian bread crumbs, the Season All seasoning, garlic powder and
red pepper. Turn into a 3-quart casserole dish. Sprinkle remainder of Italian
bread crumbs over the casserole and bake at 350F for 30 minutes. Can be served
with a green salad or a potato salad.
Serves 10.
