Lynn's Cuban Picadillo
3 tbl Oil
2 lb Lean ground beef
1 x Onion, minced
1 x Garlic clove, minced
3 x Tomatoes, peeled and chopped
2 x Apples, peeled and sliced
1 x Jalapeno, chopped
1/2 cup Raisins, soaked 10 minutes
1/2 tsp Oregano
1/2 tsp Thyme
1 x Salt and pepper (to taste)
1 tbl Butter
1/4 cup Almonds, slivered
Method :
Heat the oil in a large skillet. Add the beef and saute until lightly browned,
stirring to break up any lumps. Add the onion and garlic and saute for 5 minutes
longer. Add all the remaining ingredients except the butter and almonds. Mix
well and simmer, uncovered, over moderate heat for about 20 minutes. In a small
skillet, heat the butter and saute the almonds until they are golden brown.
Mound the beef onto a serving platter and surround with white rice.
