Back To Cuban Pork

 

James's Cuban Pork Roast

 

      3 lb pork shoulder - seasoned
    1/3 c  lime or lemon juice
      1    onion, sliced
    1/2 ts oregano
      3    garlic cloves

Instructions

Season meat with salt and pepper. Pour lime or lemon juice over
roast. Place onion slices over roast. Let stand in refrigerator 1-2
hours. Split meat in places and add garlic plugs in slashes. Roast at
325 degrees for 1 1/2 - 2 hours or 35-40 minutes per pound.
