Cullen's Cuban Pork Roast
6 lb Fresh pork leg; bone; trim
fat; make slits
6 Cl garlic; mince
2 tb Salt
1 tb Oregano
2 ts Cumin
1/2 ts Black pepper
3/4 c Fresh lemon juice
4 To 5 onions; slice
Instructions
Combine garlic with oregano, cumin, pepper and lemon juice. Rub meat well
with marinade, cover meat with onions and let rest covered in refrigerator
for at least 12 hours. Bake with Bake with marinade for about two hours
until pork is done according to meat thermometer. May also be made with
pork loin roast.
