Shanna's Cuban Pumpkin & Apple Soup
3 pounds pumpkin: peeled, seeded, and cubed
4 green apples, peeled, seeded, and coarsely chopped
1 medium yellow onion, diced
1 Italian frying pepper, seeded and diced
2 sweet chili peppers, seeded
6 cups chicken broth
1/2 tablespoon salt
white pepper to taste
chopped cilantro and ground nutmeg for garnish
Combine all of the ingredients except the cilantro and nutmeg in a large soup
pot and bring to a boil. Lower the heat and simmer for 20 minutes. Drain any
excess liquid and puree in a blender. Adjust the seasonings. Reheat the soup
over medium heat. Garnish with cilantro and nutmeg.
