Lynn's Cuban Pork Banana Stew
3/4 lb pork, tenderloin, cubed
3 tbl flour
2 tbl oil
1 x onion, chopped
1/2 x green pepper, chopped
1 sm green chili, chopped
2 clv garlic, chopped
1/4 tsp ground cumin
1/2 x glass white wine or 1/2 glass apple, juice
1 x tomato, chopped
1 1/2 cup chicken stock
1 x banana, chopped
1 handf cilantro, chopped
salt
pepper
Method :
Place the flour in a shallow dish and roll the pork in it until all of the
pieces are well-coated.
Heat a large pot over high heat, add the oil. Add the pork, and cook until
browned on all sides, about 3-4 minutes.
Add the chopped onion, garlic, chili and chopped green pepper to the pot, and
cook for about three minutes, stirring, until the onion starts to turn clear and
cook another 2 minutes. Add the cumin, wine, chopped tomato and stock.
Stir everything all together and let it come to the boil. Reduce the heat to
low, and let the pot simmer, covered, for 15 minutes.
In the meantime, put some rice on to cook.
Add the bananas to the stew, and cook it for another 5 minutes. Season with salt
and pepper and serve with the cooked rice.
