Mixed Ceviche


Ingredients:

2 lbs mixed seafood including a firm fish, clams, shrimp, whatever is available
1 very large onion, thinly sliced
1/4 c chopped parsley
5 ribs thinly sliced celery
Serrano chile peppers to taste Salt and pepper to taste
Lime juice to cover

Instructions:

Combine all ingredients and refrigerate two hours. Serve with arroz con pollo made with beer and lots of cilantro.

Some of us might find happiness if we quit struggling so desperately for it.
