Sea Bass Ceviche
1 Kilogram of Sea Bass Cleaned, take the spines
and cut in small squares.
Flush it with water.
18 limes and 6 sour oranges, mix the juices of the two.
Place the fish in a large glass bowl and cover it with the juices, salt and
pepper.
Leave this to macerate for a few hours, changing the position of the fish in the
bowl. (optional- remove the juice and replace it with a new one made of 8 limons
and 2 sour oranges, the old juice MUST be keep to be able to
drink this with PISCO or vodka if you wish)
Once you change the juice add onion and liquid chile pepper.
Macerate for another hour, serve with lettuce, boiled sweet potato and boiled
corn.
