               Granny's Cherry or Peach Cobbler

21/ cups pitted sour red cherries (canned)
1 cup sugar
3 tbs corn starch
1/4 tsp cinnamon
1/4 cup butter

Drain the cherries, reserving the syrup. Mix sugar, cornstarch and cinnamon. 
Stir in the reserved syrup. Cook, stirring constantly, until thickened. Add cherries and butter. 
Stir until butter has melted. Remove from heat.

Pastry;

2 cups flour
1/4 tsp salt
1 tsp baking powder
2/3 cup butter
5 tbs water

Combine dry ingredients and sift together in a bowl. Cut in butter, add water and blend.
Take half the dough and roll out to 1/8: thick on a lightly floured board cut into 2" squares.
Pour 1/3 of cherry mixture into a deep Pyrex baking dish. Add a layer of pastry squares.
Pour another 1/3 and add a second layer of pastry squares. Add remaining cheery mixture.
Roll oll out remaining pastry and place over top of baking dish. Seal edge and crimp with fingers.
Cut 2 slits in top to let steam escape, brush pastry with cream and sprinkle with sugar lightly.
Bake @ 325F for 30-40 mins.

For peach;

21/2 cups peeled fresh sliced peaches
1 tsp lemon juice
1 cup sugar
3 tbs cornstarch
1/4 tsp cinnamon

Mix peaches with lemon juice and sugar let stand 1/2 hour. Add other ingredients and cook
@ 325F for 30-40 mins. then proceed as above pastry.
