Granny's Rice Pudding

3 cups milk
1 cup half & half
1/2 cup long grain rice
1/2 cup sugar
Grated rind of 1 lemon
1/8 tsp ground nutmeg
1/2 tsp cinnamon

Combine milk, half and half, rice, sugar, lemon rind and nutmeg in heavy saucepan.
Cook stirring frequently until rice is soft and creamy about 1 hour. Pour into bowl
and sprinkle with cinnamon. Refrigerate until cool.

 

Texas Rice Pudding

4 cups water
1/2 tsp salt
1/2 cup
2 cups milk
1 cup rice
3/4 cup whipping cream
1 tsp vanilla
1 cup drained crushed pineapple
1/2 cup drained bing cherries

In heavy saucepan, bring water to a boil; add salt, sugar, milk and rice. Reduce heat to low
Cover tightly. Cook 30 mins stir with fork once or twice. Turn rice into glass bowl. Cool, then chill.
When ice cold and just before serving, whip cream and then whip in vanilla. Fold in
pineapples and cherries. Spread over chilled rice and serve,
