Pecan Pie Bars

 

1 1/4 cup all-purpose flour
3 tablespoons brown sugar
1/2 cup butter or margarine
2 eggs
1/2 cup brown sugar, firmly packed
2 tablespoons butter or margarine, melted
1/2 cup pecan halves
1/2 cup light corn syrup
1 teaspoon vanilla


Preheat oven to 375 degrees.

In a large mixing bowl, combine flour and 3 tablespoons brown sugar. Cut in 1/2 cup butter until mixtures resembles coarse crumbs. Pat into an ungreased 11 x 8-inch pan. Bake for 20 minutes.

While dough is baking, use a fork to beat eggs in another bowl. Stir in 1/2 cup brown sugar, pecans, corn syrup, melted butter, and vanilla. Pour over baked crust, spreading evenly. Bake 15 to 20 minutes more or until set. Cool completely before cutting into bars. Chill to store.
