Apple & Barley Pudding

Tbsp (60g) pearl barley

1-1/2 lb (680g) eating apples, peeled, cored and sliced

2 oz (60g) sugar

3/4 Tbsp (11.25mL) double cream

4-1/4 cups (1L) water
Directions:
Put the barley in the water and bring to a boil.
Add the sliced apples and continue cooking gently until the barley and
apples are soft.
Then press through a sieve, or put through the blender, and put back in the
saucepan.
Add the sugar and lemon juice and bring to a boil again.
Remove from heat, allow to cool, and then chill.
Serve cool with the cream stirred in.
