Terrine With Pistachios & Goose Liver
1 Duck boned, uncooked
5 oz pork meat
5 oz whole raw goose liver
5 oz pistachios|
1 soup spoon black pepper
1 bay leaf
1 oz pork back fat
salt & pepper
Remove all fat from duck, and blend with pork until texture is smooth.
Mix in all other ingredients, except goose liver, blending and folding. .
Place in terrine mold and center goose liver in middle. Place mold in double
boiler
of terrine. Cook in oven at 325 for 45 min.
