James's Rillettes Of Pork & Duck

 

1/2 lbs lean shoulder of pork cut into 2" cubes
1 lb duck with skin and fat cut into bite size pieces
1 medium onion peeled and studded with 3 glove
1 large clove of garlic
11/2 cup white wine
salt & pepper
1/8 grated fresh nutmeg

Place pork & duck in saucepan and cover with water and cook over medium heat about 10 min.
Add onion and garlic cover and cook 30 min, then add wine, salt, pepper and simmer 3 hrs covered.
Discard onion and remove duck and pork with slotted spoon and let cool. When cool enough to handle  place duck meat, fat and pork in bowl. Using a wire whisk work meats and fat together, add nutmeg and salt and pepper as needed. The more mixture is beaten the whiter it becomes.
Spoon into a terrine cover and refrigerate, serve cool with French bread and mustard.
