Granny's Fluffy Dumplings

 

11/2 cups flour
2 tsp baking powder
1/4 tsp salt
2/3 cup milk
2 tbs oil
1 egg, slightly beaten

In a medium bowl combine flour, baking powder and salt; blend well. Add milk, oil and eggs;
stir just until dry ingredients are moistened. Drop dumpling dough by rounded tablespoonfuls
into boiling stew mixture. Reduce heat; cover tightly and cook 13-16 mins or until dumpling
are fluffy and no longer doughy on bottom. 

Note: this may also be used for chicken and dumplings, soups etc.
For parsley-sage dumplings add 1 tbs chopped parsley and 1/2 tsp finely
crushed sage leaves to flour.

For chive-basil dumplings add 1 tbs chopped fresh chives and 1/2 tsp crushed basil leaves to flour.

There's no word in the language I revere more than 'teacher'. My heart sings when a kid refers to me as his teacher, and it always has. I've honored myself and the entire family of man by becoming a teacher.
