Chicken & Dumplings
Lynn's Chicken & Dumplings
1 3 lb chicken cut from bone in large pieces
2 celery ribs chopped
1 med onion chopped
Salt & pepper to taste
Season chicken on both sides. In a large pot place chicken and all
ingredients. Cover with water so pot is about 3/4 full bring to boil, then simmer until chicken is tender. Remove
chicken and empty all but
6 cups of the broth.
Dumplings
1 cup flour
1 egg
1/2 tsp salt
1/2 tbs shortening
1 egg
1 or 2 tbs milk
Place all ingredients except milk in a bowl. With hands mix until mixture is
like cornmeal..
Then add enough milk to moisten, mix and turn out on floured board. Roll until
very thin about1/8 inch
Cut in 1 in x 3 in strips. Drop into chicken pot 1 at a time separating
and cook, simmering for 15 more min.
You can return chicken back to pot and mix with dumplings or arrange
chicken in a deep platter and
pour dumplings over chicken.
