Shanna's Upside Down Sausage Cornbread

 

1 cup chopped onion
1/3 cup chopped green pepper
1 lb sausage
2 tbs flour
1 8 oz can tomato paste
1 8 oz can tomato sauce
Salt & pepper
2 tbs chili powder
1 carrot chopped
1'2 lb grated Cheddar cheese
1/2 sliced or chopped black olives
2 pkgs corn muffin mix

Brown onions, peppers and sausages. Stir in flour, tomatoes, seasoning and carrots.
Stir in cheese and olives and pour inti 9x13 casserole. Prepare cornbread and
spread over sausage mixture. Bake @ 400 for 30-35 mins. Let stand 5 mins.
Loosen edges and invert on serving platter.
