Overnight Potato Breakfast
1 6 oz pkg frozen hash browns
2 tbs butter
1/2 cup chopped onions
5 eggs
1/2 cup cottage cheese
1 cup shredded Swiss cheese
1 green onion chopped
Salt, paprika & pepper
5 drops hot sauce
6 slices bacon, cooked and crumbled
Prepare hash browns according to pkg. Saute onions in butter. Add to
potatoes. Beat eggs;
add to potatoes and rest of ingredients except bacon and paprika. Pour mixture
into a buttered 10" pie pan, sprinkle with bacon and paprika. Cover dish and refrigerate
overnight. Bake @ 350 for 35 mins or until potatoes are tender and eggs cooked.
