Kat's Baked Eggs With Spinach

 

2 cups steamed spinach, chopped (fresh or frozen)        
6 eggs                                                                         
salt and pepper to taste                                                 
parmesan cheese       
 Spray a 6-muffin tin with the olive oil spray   
Divide the steamed spinach evenly among the muffin holes. 
 Top each with an egg, a little salt and pepper                                              
and some parmesan. Bake at 375 for 10-12 minutes until eggs are set.

.  Variations:
· Use other greens such as chard, collard greens with minced hot pepper, or dandelion greens.
· Top with mozzarella and basil for Italian flavor, or goat cheese and sun dried tomatoes for Mediterranean.
